Crispy Cajun Crappie
6-8 crappie filets
Mix 2 cups flour with about 2 tablespoons Cajun seasoning
(Zataran's preferably).
You may add a bit of salt and pepper and/or garlic if desired to taste.
Mix 2 eggs with two tablespoons milk and beat well.
Dip filets first in flour mixture, then in egg mixture, and again in flour
mixture.
Deep fry immediately in peanut oil until light golden brown.
