Ed's Exquisite Eating Crappie

This may be used on any fish and is the only way to eat catfish but panfish (especially large crappie) are fantastic this way.

1 tablespoon olive oil

2 tablespoons lime juice

1/2 cup Chardonnay wine (white)

1 tablespoon dry mustard

1 tablespoon chili powder

1 teaspoon black pepper

1/4 cup chopped fresh cilantro

1/4 teaspoon salt

1 tablespoon melted butter

1 teaspoon chopped parsley

 

Mix the above ingredients in a 1-quart bowl

Add the crappie fillets to the mixture and marinate for about 10 minutes

Fry on lightly oiled griddle or in fry pan until lightly brown or grill over hot coals

Baste the fillets with mixture while they are cooking.

Stand back and wonder why you didn't catch more.
