Diane's Bama Crappie

Wash crappie slabs in cold water then drain well

Salt & pepper to taste

Cover with hot sauce (the hotter the better)

Let set in refrigerator for 2 hours

Drain and cover in cornmeal

Drop in (hot) peanut oil

Fry till golden brown

(It's easy to overcook crappie, remember just golden brown)
