Chase Crappie Fillets

2 lbs. of crappie fillets

2 cups of cornmeal

1 cup of flour

1 pint of buttermilk

1 tablespoon of butter

Some seasoned salt and pepper

Ground pepper

Lard

Pre-Heat the lard in a pan.

Drop the fillets in the buttermilk and butter and place in refrigerator for about 30 minutes.

Mix the flour, cornmeal and seasoning in a bowl.

Take out the fillets and drop them in the cornmeal mixture.

Cover both sides well.

Drop in grease until golden brown

Serve with beer
