You will need crappie filets, cooking oil, saltine crackers, flour, salt and pepper, an egg and milk.

 Crush the crackers so you have about a cup add 1/2 of flour, some salt and pepper in a shallow dish. Mix well the egg, 1/2 cup or so of milk and a teaspoon or so of honey (the honey helps the coating stick better and also adds a little flavor). Dip in honey mixture then in flour mixture. Fry in hot skillet with about 1/8 inch  deep of oil until browned to your liking. It is important to have the oil hot enough so the fish sizzle when dropped in the skillet. I use a med. high heat and adjust if it gets too hot. They are just awesome fried like this.
