Kan's Crispy Crappie

Prepare your favorite fish (Crappie of course).
Wisk your egg and milk mixture together.
Mix together below:

  • 2-4 cups or more Hungry Jack "dry" instant mashed potatoe flakes, use more or less flakes depending on how much fish you have, can subtitute any brand of dry mashed potatoe flakes.
  • 1/2 or 1 bag (depending on amount of fish) bag McCormick Golden Dipt Cajun style seasoned fry mix (at walmart).
  • 1-2 cups (again, depending on how much fish you have to fry) Zatarains seasoned fish-fri mix. (find it at walmart).
  • 1-2 tablespoons of Lowry's sesoned salt (optional).
  • 1-2 tablespoons of origianl Mrs Dash (optional).
  • add any other seasonings you like,

Dip prepared crappie or any other fish into egg and milk mixture and bread fish with above dry mixture and fry in your favorite oil.  We use lard or any other type of oil.

Fry fish until golden brown on outside.  I usually fry my fish till browned on outside and I make sure the fish is flaky.  Put on paper towels to drain away grease and serve.  This does taste good and is our favorite batter by far over any other method.  It is crispy and tastes good.
You do not have to use the above seasonings, use your own favorite.  Enjoy.

Just so you know.

This is a copy of a post in Crappie.com asking about the history of the site.  Just thought I'd share.

"Well, I started the site in 1996. Thats when I bought the domain name and set up the first message board. I am a computer geek so I ran the site out of my house. It was slow growing, but it pretty much doubled in size every year since I originally opened it.

Since I started the site, I've moved it from server, to new server, probably once every year or two, because of that growth. There was even a time when board members started sending me money, without me even saying a word, to upgrade my server.

Fall Crappie

There's no question that on many lakes alot of crappie do move into the creeks in the fall, but it's important to realize that not all crappie do this.  Alot of crappie behavior depends on the type of lake.  Different types of cover and structure usually give them a variety of options.

In the fall, the most important criteria for choosing an area to fish is locating baitfish.  In fact, the presence of baitfish is probably more important in locating crappie in the fall than at any other season.
